Anthonette happens to be one of my very best friends from high school and so I was honored when she asked if I could shoot her family on Christmas Eve. All four siblings, parents, babies and all. And let me tell ya, The Okorodudus' are quite the boisterous crowd! I could not stop giggling the whole time! They reminded me of my Dad's side of the family, when reunited, everybody is talkative and joking and inquisitive and high on life, like, 24/7!  I especially loved how everybody was yelling at each other in their Nigerian names and taking pix with their phones next to me and constantly cracking jokes the whole time. 'Black on black people doesn't look good!' Gah, I love this family! More pics coming soon!

{kitchen de ferrer} gingerbread cheesecake bites.

It's that time of year again. 'Christmas In A Box' time. Oh yes. It's totally what you think. But better and yummier. Almost every year I would put together and give away Christmas favor boxes to close friends. And almost every year I would bake something new. Still bite-size, of course. ;-) So what did I put in these boxes? Well, one of them is this nomlicious mini gingerbread cheesecake recipe I found a few weeks ago. It was love at first bake. And it was so good I had to bake it again to share with friends. The recipe! It's so freakin' easy! Be sure to top off the bites with chocolate chip morsels - it's so much more tastier!

Gingerbread Cheesecake Bites

1 (30 oz) package Pillsbury Gingerbread Cookie Dough (refrigerated section)
4 oz cream cheese (room temperature)
2 cups powdered sugar
1 teaspoon vanilla
1/4 cup flour
A bag of semi-sweet chocolate chip morsels

1 -- Let's make the filling first, shall we. Beat cream cheese, powdered sugar and vanilla. Put filling into a piping bag or ziplock bag. Cut off the tip of plastic bag and place in fridge.
2 -- Mix flour into the cookie dough. This will make the dough firmer, resulting in less puffing when baking and less collapsing when cooling.
3 -- Roll 2 teaspoons of gingerbread dough into balls. I used a small ice cream scooper to make the process a little faster. Depending on how big your ice cream scooper is, you may need 1.5 to 2 scoops for a good-size ball. Place balls into a mini cupcake/muffin pan with paper liners.
4 -- Make a well or indentation into each ball. To do this, place the end of a mini rolling pin or a wine cork and press into the dough.
5 -- Fill each well halfway with cream cheese filling. This will help the dough from rising too much.
6 -- Bake at 350 degrees for 9 minutes, or until toothpick comes out clean.
7 -- Let the bites cool before filling them up with more cream cheese. Top off with chocolate chip morsels.

Had a mini photoshoot with Beth and Nick's little girls a while back.  Full of bubbles and bubbly girls and more bubbles. Oh how I've missed you, bubbles! 2 of my 3 bubble machines got jacked during my wedding a year ago, which put a number of bubble-inspired photoshoots on hold. Until now. Recently acquired a brand new bubble guzzler and I'm glad to say that I'm back in bubble photoshootin' business! Yeehaw! This particular shoot was a speedy one. Made a quick 30 minute stop while on my way to Austin to shoot the kiddos. It was a bit too windy for the bubbles but we made it work. Bubbly shoot part deux with M&EM already in the works. Hopefully next time it'll be less windy!

Nothing like crafting up Christmas cards in uber comfy Spring/Summer-ish attire! Quite the oxymoron, I know. But that's Texas in December for ya! And who crafts with red lips? This gal. Sometimes just for the heck of it, sometimes when I'm in the creative, daydreamy mood. There's just something about red lips that inspires and sparks and excites life while creating. Whether it be crafting or cooking. Anything. So with red lips, homemade Gingerbread Cheesecake Bites (to be blogged soon), London Fog tea elixir and my inspiration journal - I dove headfirst into a quite ambitious DIY Christmas card project. Also to be blogged soon. If things turn out successful. Wish me luck, crafting homies!

This was a couple of days ago. When the high was 65. Then it quickly warmed up to a nice 81 the next day.  Oh hello, Texas weather, there you are. Again. Nevermind that it's December. But I'm getting used to these yo-yo weather patterns. I get to enjoy a warm London fog in hand one day, then gourmet ice cream at Lick the next. Which, btw, I'm currently loving their Sweet Persimmons + Sage and Roasted Beets + Fresh Mint. Addicted, really. Maybe these recurring warm weather cameos are a good thing!  If the weather pattern stays this way, I get to enjoy all my foodie favorites year 'round! Oh to the yeah!
